With summer in full swing, there’s no better time to cool down poolside with an icy adult beverage. To celebrate the season, the master bartenders at Terranea Resort crafted their own special cocktails, each inspired by one of the four pools on property.
At cielo point …
a homage to the Pacific Rim with just a dash of “tiki” character
1½ ounces Denizen rum
¾ ounce Bulleit bourbon
½ ounce Nolet’s gin
1 ounce orange Curaçao
1 ounce pineapple juice
1 ounce lime juice
½ ounce orgeat (almond syrup)
¼ ounce honey syrup
In a mixing glass, add all ingredients and shake vigorously. Serve in a Collins glass. Garnish with an orange wheel, cherry on a skewer and a pineapple leaf.
At the Resort Pool …
California dreaming at its purest
1½ ounces Don Julio tequila blanco
½ ounce The King’s Ginger liqueur
2½ ounces cucumber/basil puree*
¾ ounce lime juice
½ ounce agave nectar
Add all ingredients to a shaker tin and shake and strain over ice in a 12 oz plastic cup. Garnish with a cucumber slice and basil leaf.
*For cucumber/basil puree: Add equal parts cucumber and basil in a blender and add a heavy splash of lime juice and water. Blend until ingredients are liquefied and not chunky. Strain into storm pourer.
At Vista Pool …
a nod to the class and charm of Europe’s Rivieras
1½ ounces Rémy Martin V
½ ounce limoncello
3 ounces blueberry puree*
Pour ingredients together. Ice, shake and strain into plastic highball and garnish with rosemary.
*For blueberry puree: Blend one pack of blueberries, 3 ounces lime juice and 2 ounces simple syrup.
At the Spa Pool …
a haven of beauty, relaxation and total bliss
2 ounces sage-flavored vodka
1 ounce lemon juice
¾ ounce agave syrup
1 ounce cucumber puree
Mix all ingredients together and top with club soda. Garnish with a cucumber and lemon slice.
