1. Moët Ice Impérial NV Champagne, France
Pair with: local market ceviche, onion, tomato, lime, jalapeño, Terranea sea salt and tortilla chips, served at cielo point
Moët Ice Impérial is the first and only Champagne especially created to be enjoyed over ice. A new Champagne experience combining fun, fresh and free sensations while remaining true to the Moët & Chandon style—a style distinguished by its bright fruitiness, its seductive palate and its elegant maturity.
2. 2012 Poet’s Leap Riesling, Columbia Valley, WA
Pair with: lobster on toast, saffron aioli, Palicios chorizo and red mustard, served at mar’sel
This impressive Washington Riesling seems drier on the nose than it is, with its limeade and passion fruit aromas. It’s actually slightly heavier and richer than that, the fleshy flavors suggesting a pairing with spicy food.
3. 2014 ONEHOPE Sauvignon Blanc “Rutherford Estate,” Napa Valley, CA
Pair with: chimichurri grilled octopus, cauliflower garlic aioli and cannellini bean salad, served at catalina kitchen
This 2014 Sauvignon Blanc represents one of the very first wines from the ONEHOPE vineyard located in the heart of Napa Valley. Intense aromas of white peach and green apple, complemented by citrus zest and finished with hints of guava and papaya.
4. 2014 Villa Oneiro Chardonnay, Rolling Hills, CA
Pair with: flatbread of the day, served at the Lobby Bar
This local wine possesses a good intensity of aromas including white peach, golden apple, tangerine blossom, and a solid lemon core that is accented with wet stone-like minerality. The wine is finished with toasted brioche and lily flower notes. What begins modestly finishes with layers of toasted almonds and pear with a good balance of acidity.
5. 2015 Chateau d’Esclans “Whispering Angel” Provence, France
Pair with: grilled swordfish, summer radish, seaweed butter and served at mar’sel
An irresistible pink! Charming, refreshing, refined, with plenty of juicy, enticing strawberry and berry fruit, this is a Rosé that should be in everyone’s cellars, without exception. Great with grilled fish and root vegetables!
6. 2014 Bera Brachetto d’Acqui, Piedmont, Italy
Pair with: berry gelatos or sorbets, served at sea beans
A unique wine, 100% Brachetto, that’s cherry red in color, with a characteristic fragrance of fresh flowers and roses, along with a sensation and intenseness of red fruits. Great pairing with berries, sweets and strawberries.
